Turkey Shepherds Pie
INGREDIENTS
280 g diced cooked turkey 180 ml turkey gravy 110 g grated carrots 475 ml prepared stuffing 1 450g can corn, drained 500 g smooth mashed potato
DIRECTIONS 1. In a greased medium baking dish, layer the meat, gravy, carrots, stuffing and corn. Top with potatoes. Bake, uncovered, at 180 degrees c for 45 minutes or until browned.
Turkey pasta bake
INGREDIENTS 500 g uncooked pasta 115 g butter 60 g all-purpose flour 750 ml chicken stock 475 ml milk 150 g grated Parmesan cheese (or to taste) 500 g chopped cooked turkey
DIRECTIONS | | 1. Preheat oven to 360 degrees F (180 degrees C). Lightly grease a medium baking dish. 2. Bring a large pot of lightly salted water to a boil. Add pasta, and cook for 8 to 10 minutes or until al dente. Drain, and place in the prepared baking dish. 3. Melt butter in a pan over medium heat. Stir in flour. Mix in chicken stock and milk. Cook and stir , bring mixture briefly to a boil. Stir in about 1 cup of Parmesan cheese, and remove from heat. 4. Mix chicken stock mixture and turkey with cooked pasta. Turkey casserole
This is a great recipe for any leftover baked meat but particularly nice as a turkey recipe. INGREDIENTS
3Tbsp butter 1Tbsp all-purpose flour 1 450ml can can evaporated skim milk 250 ml water pinch of salt pinch black pepper pinch onion powder 30 g extra butter 200 g seasoned dry bread stuffing mixture 200 g cooked, diced leftover turkey meat 100 g shredded Cheddar cheese 500 g leftover mashed potatoes | | DIRECTIONS 1. Preheat oven to 360 degrees F (180 degrees C). Lightly grease a medium size baking dish. 2. Melt 3 tbsp of butter in a saucepan on low heat. Blend in the flour. Gradually stir in evaporated skim milk and water, then season with salt, pepper, and onion powder. Thicken sauce for 5 minutes. 3. In another pan over low heat, melt 2 tbsp butter. Blend in the dry stuffing mix. Place the turkey meat in the greased baking dish. Pour the sauce over meat, then sprinkle with the Cheddar cheese. Spread mashed potatoes over this. Sprinkle with the stuffing mixture. 4. Bake 45 minutes in the preheated oven .

Turkey Pie
INGREDIENTS
2 medium diced carrots 1/2 a finely chopped onion 1/2cup chopped celery pinch dried thyme pinch pepper 1 1/2 tbsp butter or canola oil 2 cups diced cooked turkey 2 Tbsp all-purpose flour 1 can condensed golden mushroom soup, undiluted 3/4 cuo frozen diced green beans, defrosted 388 g Pastry for double-crust pie (9 inches) 1Tbsp milk

1. In a large pan, stir-fry carrots, onion, celery, thyme and pepper in butter until crisp but tender. Coat the turkey with flour(shake around in a plastic bag). Add turkey, soup and green beans to the vegetable mixture; mix well. Line a 9-in. pie plate with pastry. Add turkey & veg mixture. Cut pastry to fit top of pie; sclose and flute edges with a fork. Cut 2 little slits in pastry. Brush with milk. Protect edges loosely with foil. Bake at 180 degrees C for 50-60 minutes or until lightly browned. Serve warm. Jane - Littlewood, Co.
