THE BEST BANANA CAKE OR MUFFINS

150g butter, 1 cup sugar, 2eggs, 1 cup mashed ripe bananas, 2 cups plain flour 1 teaspoon
baking powder, 2 tablespoons milk and
1 teaspoon carb soda.

Melt butter, add sugar,eggs, and mashed banana,
mix low speed to combine.

Dissolve carb soda in the warmed milk, add this
and the flour and baking powder to the bowl.
Mix on increased speed 2 minutes.
Bake in 20cm round cake pan, lined with baking
paper.OR I like to make muffins.


If in a cake tin, bake about 50 minutes at 180c or in muffin tins about 15 mins, depending on size of muffin. They will spring back when done.


CHOCOLATE,WHISKY AND RAISIN CAKE

22g ground almonds 85 mls water

6 eggs 225g butter

3oog sugar 50g sr flour

50g plain flour 125ml whisky

80g raisins small pinch baking powder

400g chocolate icing sugar

Marinate the raisins 24 hours in whisky.


Melt the choc.water and butter. Separate the eggs, whip the whites just until stiff. Cream the sugar and yolks. Add the choc mixture, then stir in the ground almonds, plain and sr flour,baking powder and egg whites. When all the ingredients are properly combined, pour the mixture into a greased and well lined flat baking tray and bake 40 mins 180c Turn oven fan off!!

Remove the cake from the oven and allow to cool on a rack

Dust with icing sugar and serve with strawberry puree and a dollop of cream. Cake will freeze.


CHOCOLATE FRUIT CLUSTERS

1 0z butter 6 oz cook chocolate 1 teasp. Grand marnier

1 oz glace cherries, & ginger. 1 oz roasted hazelnuts

1oz dried apricots 3 pitted dates

¼ cup sultanas

Chp fruit small under hot water ( for ease of cutting) . Pat dry, add nuts.

Combine choc. And butter in a double saucepan and melt. Mix well, then mix in fruit and nuts.

Drop on gladbake in teaspoonfulls. Set in fridge.


COCONUT ICE

2 ½ cups PURE icing sugar

Add… 1 beaten egg white, 1/3 cup NCM(condensed milk), 1 ¾ cups coconut.

Stir well to combine. Divide the mixture in half, color 1 half pink.

Press white layer into a greased and lined tin, press the pink layer over the top. Set in the fridge, Cut into squares.

CREAMY CARAMELS
If you dont have a lot of time for baking cakes and biscuits but yoiu'd like to have a home made treat on hand, try these caramels.


4 oz butter ½ lb brown sugar 1 tin NCM

2 tablesp. Golden syrup

Melt all together over low heat, stir all the time until the mixture leaves

the side of the pot. 15-20 mins usually.

Place in a slab tin, set in fridge, cut into squares when cold.
