CARBONARA

Cook Fettucini el dente

Sauce:- Saute 4 rashes finely chopped bacon, add 1 oz butter, 1/3 cup cream and pinch paprika and pepper.

Add 1 well beaten egg and 1 egg yolk and 2oz parmeson cheese.

Served sprinkled with grated Parmeson.

QUICK SEAFOOD SPAGETTI

Ingredients
200g scallops
200g calamari & shelled prawns (uncooked)
100g snowpea sprouts
375g spaghetti
¼ cup (60ml) olive oil
2 cloves garlic, crushed
2 Tbsp chopped fresh chives
1 tsp cracked black peppercorns
2 tsp grated lemon rind
1/3 cup chopped fresh flat-leaf parsley
1/3 cup lemon juice

Method
1. Cook pasta as instructions describe.
2. Stir-fry all seafood and garlic in oil until seafood is cooked through.

3. Add Snowpea sprouts, herbs, rind, juice and peppercorns; stir until well combined. Lightly blend seafood mixture through the hot pasta before serving.

Penne with chicken, olives & cherry tomatoes

Ingredients
1 red capsicum
1 Roast Chicken
500g penne pasta
1 tbs olive oil
2 garlic cloves, crushed
250g punnet cherry or grape tomatoes
100g baby Bocconcini, drained and sliced
10 pitted kalamata olives
¼ cup chopped basil or parsley


Directions
1. Trip capsicum, cut 4 sides off and grill, peel and slice.

2. Remove meat from chicken, discard skin and bones, and shred or dice.

3. Cook pasta as per packet. Drain. Cover and keep warm.

4. Heat oil in a frying pan, add garlic and tomatoes. Cook for 2 minutes. Add chicken, capsicum, bocconcini and olives. Add in pasta, toss and warm through. Add basil.

3 Colour Bow Tie or Spiral Pasta with Salami

Pasta recipes with 3 colour bows spirals etc bring not onlya nice colour to your dinner but also (if you select ones with natural colours from vegetables) extra nutrients as well.

Ingredients
50g mild or hot Salami, cut into strips
250g pasta (spirals or Bow Tie in 3 colours)
1 big red tomato, finely diced
1 tsp sugar
1 yellow and 1 red capsicum,
cut into strips and sliced on the diagonal
2 cloves of garlic, finely chopped
100g snow peas, halved and par-steamed
pinch of salt and black pepper
parmesan cheese, chopped parsley and chopped olives to garnish

Directions
1. Cook pasta until al dente.

2. Sprinkle the tomato with the sugar and set side.

3. Prepare the vegetables and gently sauté the capsicums and garlic until tender. Add the salami slices and snow peas then toss together briefly. When heated through, add the tomato.

5. Lastly add drained pasta to the pan and toss.

6. Season with salt and pepper. Serve the pasta topped with the Parmesan cheese, parsley and black olives.

Low-fat creamy mushroom & ham pasta

A great one if you're looking for pasta recipes that are adaptable to a more low-fat option

Ingredients
400g penne pasta
spray oil
1 cup mushrooms, sliced
4 shallots, finely sliced
1 tsp cornflour
185ml light evaporated milk
100g shaved leg ham
1/4 cup grated parmesan

Directions
1. Cook penne , drain and return to pan.


2. Heat oil i non-stick pan over medium heat. Add mushrooms and cook for 8-10 minutes, stirring often, add shallots and cook for 1 minute. Blend cornflour into milk, add into pan, stirring constantly. Bring to the boil. Reduce heat and simmer for 1 minute. Stir through ham.

3. Serve sprinkled with parmesan.

Veal Fettuccine

Ingredients:
300g fettuccine
Olive oil
2 veal fillets, sliced
1 small red onion, thinly sliced
2 garlic cloves, crushed
1 red chicory, chopped
2 Tbsp chopped Italian parsley
8-10 baby bocconcini, sliced
Extra parsley and sliced bocconcini for garnish



Directions
1 Cook fettuccine as per instructions
2 Cook veal in a little heated oil . Remove from pan. Add a dash more oil to the hot pan. Add onion, garlic and chicory and cook a few minutes until tender. Combine all with salt and pepper, toss and serve, garnished with extra parsley and bocconcini..
