Margy's Curried Chicken Fillets
This is our favourite chicken fillet recipe. chicken fillets , ( 4(about 500g) skinless breasts),cut into small cubes 400ml reduced fat coconut milk 250ml reduced salt chicken stock 2-3 tablespoons green curry paste 3 kaffir lime leaves, finely grated 300gms pumpkin, peeled and chopped 230g can bamboo shoots, drained 300g snake beans chopped 300g broccoli,cut into florets 1 tablespoon fish sauce 1tablespoon palm sugar grated 2 tablespoons basil leaves
| | 1. Put the coconut milk,stock,green curry paste and kaffir lime leaves in wok or large pot and bring to the boil. Cook over a high heat until the sauce starts to thicken slightly. Add the pumkin and simmer for 10 mins or until it starts to soften. 2.Add the chicken breast and bamboo shoots, reduce the heat and simmer until chicken is tender. Add the snake beans,broccoli,fish sauce and palm sugar and cook uncovered until the vegetables are soft. Remove from the heat and stir through half the basil leaves. ENJOY!

| Chicken and peanut Gumbo ( Nothing like the taste of Caribbean recipes! ) chicken fillets (800g thigh fillets), cut into cubes,300g okra, peanut oil, 2 large onions, chopped, 3 cloves garlic, crushed, 1teaspoon of sambal olek(hot and spicy), large can of crushed tomatoes, 1/4 cup of tomato paste, 1/3 cup of peanut butter(crunchy), 1 large potato, cut into large squares, 2 cups of water
Trim stems from okra, prepare all veg, stir fry chicken in oil until brown (throw in the casserole dish), brown onion, garlic and sambal olek in a little oil, add remaining ingredients, mix well and add to casserole. Cook in moderate oven 1 hour or simmer on stove top 30 minutes ,or until potato is tender.

| Moroccan-style Chicken with Almonds 1 cup of raisins, 3 finely chopped green shallots, 1 grated apple, 1 teaspoon ground ginger, 1/2 cup dry bread crumbs, 8 large thigh fillets, olive oil, 1/3 cup roasted almonds, 1/2 cup orange juice, 1/4 cup(60ml) plum jam, 1/2 cup dry white wine, 1/2 teaspoon ground cinnamon, 1 cup chicken stock.
Combine first 5 ingredients well, spread a level tablespoon across the middle of each flattened fillet and roll up with 2 toothpicks. Brown chicken fillets on both sides in a little oil and plonk in a large casserole dish. Bring ll other items to the boil and our over, cook in a moderate oven 1 hour or until chicken is cooked through.(or simmer 20 mins on stove top in the pan). Serve with extra toasted almonds and finely sliced green shallots.
