THAI RED BEEF CURRY 500g lean beef strips, 2 teasp oil, 1 teasp crushed garlic, ½ red capsicum, 80 g button mushies, 1 tablesp. Sugar, 1 tablesp Song Gai (brand) Thai Red Curry Paste, 1 tablesp. Song Gai Fish Sauce, 2 /150ml cans coconut milk, 80g spinach chopped, 4 tablesp. Chopped fresh basil or coriander
Mix beef strips with oil and garlic Heat wok high. Stir fry beef strips in batches. Add capsicum amd mushies with a sprinkle of water Steam 1-2 mins covered. Return beef strips.Add curry paste, sugar,sauce and coconut milk, spinach and basil or coriander.Toss and heat thru’ about 1-2 mins. Serve with boiled rice.
BEEF STROGANOFF
1 kg Sirloin beef, 2/3 cup tomato juice, 1/3 cup butter, ½ cup sherry, 3 medium onions, 1 ½ cups water, 225g mushrooms sliced, 2/3 cup sour cream, S&P, flour
Cut meat into thin strips. Dredge in a plastic bag with flour. Brown quickly in half the butter. Remove meat and add the rest of the butter, saute the onions and mushrooms 5 mins. Add the ,season.Add tomato juice, sherry and water. Bring to the boil, cover simmering 2 hours or until tender, stir frequently. Stir in sour cream and serve at once.
BEEF BOURGOIGNON
1 kg topside steak, ¼ teasp. Dry thyme ,1 tablesp. Butter, 1 bay leaf, 1 tablesp. Oil, 1 clove crushed garlic, 4 rashed bacon, diced, 3 onions quartered, 1 tablesp. Flour,1 ½ cups red wine, 200g button mushrooms
Cube steak,saute in oil,remove from pan. Cook bacon, stir in flour, add wine and stir well. Return meat to the pan season with P & S, thyme, bayleaf and garlic. Bring to the boil, then simmer 1 hour. Saute onions and mushrooms 3 mins, add to the meat, simmer gently another 30 mins.
BEEF CASSEROLE 1 kg chuck, cube and dredge in flour, 75 g diced bacon,12 small mushrooms, 2-3 cups water,10-12 pickling size onions, ½ cup red wine,½ tin tomato paste, 1-2 sliced carrots,1 beef cube & black pepper, 3 bay leaves,1 diced capsicum, 10-12 tiny potatoes
Put all these in a slow cooker ( or casserole ) and cook slowly about 4 hours.
SWEET AND SOUR STEAK 500g diced steak, 1 pkt chicken noodle soup, 1 onion,2 cloves garlic, ½ cup vinegar, 2 tablesp.brown sugar,1 diced carrot, 2 tablesp.,soya sauce, 1 cup celery, diced,1 green pepper ,1 small can pineapple pieces
Brown the diced meat and sliced onion, garlic. Add and saute vegies, cook 10 mins. Blend the soup, vinegar, soya sauce, brown sugar and pineapple syrup. Add to the meat etc. Cook 1 ½ hours a 180c in oven, add pineapple half hour before serving.
HUNGARIAN GOULASH 1 kg chuck steak, 1 tablesp sweet paprika, 2 tablesp butter,1 sliced green capsicum , 1 clove crushed garlic, 2 tablesp. Tomato paste,1 onion chopped , 2 large potatoes, cubed ,1 cup beef stock,1 cup sour cream ,Large can crushed tomatoes.
Cube meat. Heat butter, brown meat,remove. Add onions and garlic, cook 5 mins.Add stock,tomatoes, paprika, S&P and bring to the boil, simmer ¾ hour. Add capsicum,potatoes, tomato paste, simmer another ¾ hour until the potatoes are cooked and the gravy is thick. Serve with noodles and top with sour cream.
