Quick Seafood Spaghetti Ingredients 200g scallops 200g calamari & shelled prawns (uncooked) 100g snowpea sprouts 375g spaghetti ¼ cup (60ml) olive oil 2 cloves garlic, crushed 2 Tbsp chopped fresh chives 1 tsp cracked black peppercorns 2 tsp grated lemon rind 1/3 cup chopped fresh flat-leaf parsley 1/3 cup lemon juice | Method 1. Cook pasta as instructions describe. 2. Stir-fry all seafood and garlic in oil until seafood is cooked through.
3. Add Snowpea sprouts, herbs, rind, juice and peppercorns; stir until well combined. Lightly blend seafood mixture through the hot pasta before serving.
Easy Prawn Pilaf
Ingredients 1 cup basmati rice (or any long grain) 375ml salt reduced fish stock ½ cup water 1 cinnamon stick 1/2 tsp cardamom seeds 1 tsp grated ginger 500g packet frozen asian style vegetables 300g shelled green prawns Lemon for serving
| | Method 1. Place first 5 ingredients in a deep frypan or saucepan. Cover with a lid and bring to the boil; reduce heat and simmer for 7 minutes.(alternatively cook in your rice cooker and in the last 5 minutes add the veges as in step 2)
2. Add frozen vegetables and prawns, return to the boil, cover and simmer another 5 minutes or until liquid is absorbed and rice is tender.
3. Remove cinnamon stick, season with salt and pepper and serve with wedges of lemon.
Easy Paella
This Spanish recipe with seafood can be complex to prepare or simple...here we have scored a nice easy version.
| Ingredients 1 Tbsp olive oil 1 chorizo sausage, sliced 1 onion, chopped 2 cloves garlic, crushed 1 red capsicum, trimmed and sliced 2 cups long grain rice 1 tsp smoked paprika pinch saffron 2 ½ cups chicken or fish stock 400g canned diced tomatoes 300g marinara mix ½ cup Frozen Peas lemon wedges | Method 1. Stir fry chorizo, onion and garlic in oil in a deep frying pan and cook for 2 minutes. Add in the capsicum, rice, paprika and saffron and cook for 1 minute.
2. Add in stock and tomatoes, salt and pepper and stir well. Bring to the boil, reduce heat to a low simmer, cover and cook for 15 minutes.
3. Uncover and stir in marinara mix and peas. Cook, with a cover, for a further 10 minutes until marinara is cooked. Remove from the heat and leave for 5 minutes before serving. Serve with a wedge of lemon
Lasagne Marinara

Ingredients 2 Tbsp plain flour 2 cups Milk 2 Tbsp Olive Oil 2 Tsp butter1 small onion finely diced 825g can Diced Tomatoes 600g Seafood Marinara Mix 9 dried instant lasagne sheets 20g grated parmesan cheese juice of 1 lemon and a little rind
Directions 1. Heat 1Tbsp oil and the butter over a medium heat. 2. Add flour, stirring continually, until mixture is bubbling. Remove saucepan from heat and slowly add milk, stirring until smooth. Return to heat and stir constantly until sauce boils. Reduce heat and simmer for 2 minutes. (for a healthier alternative make a white sauce with 2 cups milk, 3 tsp cornflour, 1 Tbsp flour and add the cheese to this)
3. Heat a little oil in a non-stick frying pan over a medium high heat. Add onion and cook for 3 minutes until soft. Add diced tomatoes, lemon rind and juice. Cook for 2 minutes. Add marinara mix, remove from heat.
4. Alternate marinara mix, lasagne sheets, white sauce in layers, finishing with white sauce and sprinkle with parmesan. Bake for 30 minutes. Leave for 10 minutes before cutting.
